  • 1 cup mayonnaise
  • 1 cup sour cream
  • 1 teaspoon pepper
  • 1/2 teaspoon garlic powder
  • 1 (16 oz) package shredded sharp cheddar cheese
  • 2–3 bags Fritos Scoops corn chips

Instructions

  1. Step 1: In a large bowl, combine the drained MexiCorn, chopped green chiles, drained jalapeno peppers (add some of the liquid if you like extra heat), and chopped green onion.
  2. Step 2: Stir in mayonnaise, sour cream, pepper, garlic powder, and shredded sharp cheddar cheese until everything is well mixed.
  3. Step 3: Cover the bowl and chill the dip for at least two hours or overnight to let the flavors meld.
  4. Step 4: Serve chilled with plenty of Fritos Scoops corn chips for dipping.

Tips & Variations

  • For a milder dip, reduce the amount of jalapeno peppers or omit the liquid from the can.
  • Add a squeeze of fresh lime juice for a bright, tangy twist.
  • Swap the sharp cheddar for pepper jack cheese to add a subtle spicy kick.

Storage

Store the corn dip in an airtight container in the refrigerator for up to 3 days. Stir well before serving again. It’s best enjoyed chilled, but you can bring it to room temperature if preferred. Avoid freezing to maintain the creamy texture.
