  • 25 grams butter
  • 1 onion, chopped
  • ½ sweet potato, peeled and chopped
  • 3 cloves garlic, minced
  • ½ teaspoon ground cinnamon
  • 2 tablespoons fresh basil, torn
  • 2 (400g) cans chopped tomatoes
  • 500ml chicken stock
  • ½ teaspoon sugar
  • 50ml single cream

  • 125g dried breadcrumbs
  • ½ teaspoon baking powder
  • 75g mature cheddar, grated
  • 1 teaspoon mustard powder
  • 1 teaspoon dried oregano
  • 1 egg
  • 50g cream cheese

Instructions

  1. Sauté Vegetables: Heat the olive oil and butter in a large pot over low heat. Add the chopped onion and peeled, chopped sweet potato. Cook slowly for 5-10 minutes until the vegetables are softened and fragrant.
  2. Add Aromatics: Stir in the minced garlic and ground cinnamon, cooking for about 1 minute to release their flavors. Then add torn fresh basil, canned chopped tomatoes, and chicken stock. Stir well to combine all ingredients.
  3. Cook Soup: Bring the mixture to a boil, then lower the heat and cover the pot. Let the soup simmer gently for about 20 minutes to allow all flavors to meld and the vegetables to fully soften.
  4. Make Dumplings: In a bowl, combine dried breadcrumbs, baking powder, grated mature cheddar, mustard powder, dried oregano, egg, and cream cheese. Mix thoroughly until you get a stiff but pliable mixture. Form the mixture into 8 equal-sized balls.
  5. Blend Soup: Using a blender or immersion blender, puree the soup until smooth. Stir in sugar, salt, pepper, and the single cream. Adjust seasoning to your taste.
  6. Cook Dumplings: Carefully drop the prepared dumplings into the simmering soup. Cover and let them cook for 10 minutes without stirring to help them cook evenly and maintain their shape.
  7. Serve: Ladle the soup into bowls, placing two dumplings in each serving. Serve hot for a comfort-filled meal.
