Ingredients

Scale

Pastry

  • 1 sheet puff pastry, thawed
  • Flour for dusting the work surface

Filling

  • 1 cup fresh spinach, chopped and sautéed
  • ½ cup crumbled feta cheese
  • 1 garlic clove, minced
  • 1 tablespoon olive oil
  • Salt and black pepper to taste
  • 1 teaspoon dried oregano or dill (optional)

Topping

  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat the oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper to prevent sticking and ensure even baking.
  2. Prepare the spinach filling: In a skillet over medium heat, warm the olive oil and sauté the minced garlic for about 30 seconds until fragrant. Add the chopped spinach and cook until wilted. Season with salt, black pepper, and dried oregano or dill if using. Remove from heat and allow the mixture to cool slightly to prevent soggy pastry.
  3. Roll out the puff pastry: Lightly dust your work surface with flour and roll out the thawed puff pastry into a rectangle approximately 10 by 12 inches.
  4. Assemble the filling: Spread the cooled spinach mixture evenly over half of the puff pastry rectangle. Evenly sprinkle the crumbled feta cheese over the spinach layer.
  5. Fold and seal: Fold the pastry over to cover the filling, gently pressing to seal the edges. Use a rolling pin to lightly flatten the folded pastry for an even thickness.
  6. Cut and twist strips: Cut the folded pastry into 1-inch-wide strips. Twist each strip several times to create the characteristic twists and place them on the prepared baking sheet, spaced slightly apart.
  7. Apply egg wash and bake: Brush the tops of the pastry twists with the beaten egg to achieve a golden glaze while baking. Bake in the preheated oven for 15 to 18 minutes, or until the twists are puffed and golden brown.
  8. Cool and serve: Allow the pastry twists to cool slightly on a wire rack before serving. They are best enjoyed warm, but can also be served at room temperature.

Notes

  • Ensure the spinach mixture is cooled before spreading on the pastry to prevent sogginess.
  • You can substitute fresh spinach with thawed and thoroughly drained frozen spinach.
  • For extra flavor and texture, sprinkle sesame seeds or grated Parmesan cheese on top before baking.
  • Store leftovers in an airtight container and reheat in the oven to restore crispness.
  • These twists make excellent party appetizers or snacks and pair well with dips like tzatziki or hummus.
