- Brown the Beef: In a skillet over medium-high heat, brown the ground beef until fully cooked, breaking it apart as it cooks. Drain any excess fat to prevent greasiness.
- Combine Ingredients in Slow Cooker: Transfer the browned beef to a 6-quart slow cooker. Add the matchstick carrots, sliced red bell pepper, and roughly chopped scallions.
- Prepare Sauce and Add: In a bowl, whisk together minced garlic, low sodium soy sauce, brown sugar, and beef stock. Pour this mixture over the meat and vegetables in the slow cooker, then stir to combine evenly.
- Slow Cook: Cover the slow cooker and cook on LOW for 4-6 hours or on HIGH for 2-3 hours, allowing flavors to meld and vegetables to soften.
- Add Ramen Noodles: About 30 minutes before serving, add the dry ramen noodles (discard seasoning packets) directly into the slow cooker. Stir frequently during these last 30 minutes to prevent the noodles from sticking and to ensure they cook evenly.
