Ingredients

Scale

Shrimp Scampi

  • 1 lb large shrimp (peeled and deveined)
  • 4 tbsp unsalted butter, divided
  • 2 tbsp olive oil
  • 4 garlic cloves, minced
  • 1/4 cup dry white wine (or chicken broth)
  • 2 tbsp freshly squeezed lemon juice
  • 1/4 tsp red pepper flakes (optional)
  • 2 tbsp chopped fresh parsley, plus more for garnish
  • Salt and pepper to taste

Garlic Bread

  • 4 thick slices of French or Italian bread
  • Garlic butter (made by mixing softened butter with minced garlic and parsley)

Instructions

  1. Prepare the Garlic Bread: Preheat the oven to 375°F (190°C). Spread garlic butter evenly on each slice of bread and arrange them on a baking sheet. Bake for 8-10 minutes or until golden and toasted. Remove from oven and set aside.
  2. Cook the Shrimp: Heat 1 tablespoon olive oil and 2 tablespoons butter in a large skillet over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant. Season the shrimp with salt and pepper, then add them in a single layer to the skillet. Cook shrimp for 2-3 minutes per side until pink and opaque. Remove shrimp and set aside.
  3. Make the Sauce: In the same skillet, add remaining 1 tablespoon butter and pour in the white wine (or chicken broth). Allow it to simmer for 1-2 minutes to reduce slightly. Stir in the lemon juice, red pepper flakes if using, and mix until the butter is melted and the sauce is smooth.
  4. Combine and Serve: Return the cooked shrimp to the skillet and toss gently to coat them thoroughly in the sauce. Sprinkle with fresh parsley and stir gently again. Divide the shrimp and sauce into serving bowls and serve with the warm garlic bread on the side. Enjoy!

Notes

  • You can substitute chicken broth for white wine to keep the recipe alcohol-free.
  • Adjust red pepper flakes to your preferred spice level or omit for a milder flavor.
  • Use fresh parsley for the best bright herb flavor.
  • Serve over cooked pasta or rice if you prefer a more filling meal.
  • Garlic butter can be prepared ahead and stored in the fridge for convenience.
