Pears
- 3 ripe but firm pears (Bartlett or Bosc), halved and cored
- 2 tbsp unsalted butter
- 1/4 tsp ground cinnamon (optional)
- Fresh mint leaves for garnish (optional)
Filling and Sauce
- 3 oz goat cheese
- 1/3 cup fresh cranberries
- 2 tbsp honey (plus more for drizzling)
- Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for roasting the pears evenly.
- Prepare Pears: Slice each pear in half lengthwise and carefully scoop out the cores. Trim the bottoms if needed so the halves can sit flat in the baking dish.
- Arrange Pears and Add Butter: Place the pear halves cut-side up in a baking dish and add a small pat of unsalted butter on each half to enhance caramelization during roasting.
- Roast Pears: Roast the pears in the preheated oven for 20 minutes or until they are fork-tender and golden brown around the edges.
- Make Cranberry Sauce: While the pears roast, combine fresh cranberries and 2 tablespoons of honey in a saucepan over low heat. Simmer gently until the berries burst slightly and the mixture thickens.
- Cool Pears and Add Cheese: Remove the pear halves from the oven and allow them to cool slightly. Then, fill each pear half with creamy goat cheese.
- Add Cranberry Mixture and Honey: Spoon the warm cranberry sauce over the goat cheese in each pear half and drizzle with extra honey for added sweetness.
- Garnish and Serve: Garnish with fresh mint leaves and a light sprinkle of ground cinnamon if desired. Serve the pears warm or slightly chilled for the best flavor experience.
Notes
- Choose pears that are ripe but still firm to ensure they hold their shape during roasting.
- Substitute honey with maple syrup for a different flavor profile or to make it vegan-friendly.
- The cinnamon garnish is optional but adds a warm, spicy note that complements the fruit and cheese.
- For easier eating, you can slice the pears after roasting and assembly.
- This dish can be served as a light dessert, brunch item, or elegant appetizer.
