Ingredients

Scale

Chicken

  • 4 boneless, skinless chicken breasts
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1/2 teaspoon black pepper

Vegetables

  • 1 red bell pepper, sliced
  • 2 carrots, sliced
  • 1 zucchini, sliced
  • 1 yellow bell pepper, sliced
  • 1 red onion, sliced

Garnish & Serving

  • 1 lemon, cut into wedges
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (200°C) to prepare for roasting the chicken and vegetables.
  2. Season the Chicken: In a small bowl, combine 2 tablespoons of olive oil, salt, black pepper, paprika, garlic powder, and dried thyme. Rub this mixture evenly over the chicken breasts to coat them well.
  3. Prepare the Vegetables: In a large bowl, toss the sliced carrots, red bell pepper, yellow bell pepper, zucchini, and red onion with the remaining 1 tablespoon of olive oil, salt, and pepper to season uniformly.
  4. Arrange in Baking Dish: Place the seasoned chicken breasts in the center of a large baking dish. Surround the chicken with the seasoned vegetables arranged evenly around it.
  5. Roast: Roast the dish in the preheated oven for 25-30 minutes until the chicken is thoroughly cooked (internal temperature of 165°F or 75°C) and the vegetables are tender.
  6. Serve: Remove from the oven, garnish with freshly chopped parsley, and serve with lemon wedges on the side for added freshness and flavor.

Notes

  • Check the internal temperature of the chicken to ensure it reaches 165°F (75°C) for safe consumption.
  • You can swap or add other vegetables such as potatoes or broccoli for variation.
  • Let the chicken rest for a few minutes after roasting to retain juices before slicing.
  • Use fresh herbs like thyme if available for enhanced flavor.
  • This recipe is easily doubled for larger gatherings.
