A classic Philly Cheesesteak recipe featuring thinly sliced ribeye beef, sautéed peppers and onions, and melted provolone cheese served on toasted hoagie rolls or on their own for a low-carb option. Cooked on a griddle to achieve the perfect sear and flavor melding.

Beef and Vegetables

  • 2 pounds shaved beef/thin sliced Ribeye
  • 1 green bell pepper, cut into ¼-inch slices
  • 1 onion, thinly sliced

Cheese and Bread

  • 15 slices provolone cheese
  • Hoagie rolls (optional, for serving)
  • 1 jar Cheez Wiz (optional, for serving)

Seasonings and Oils

  • 3 tbsp olive oil or cooking oil
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Preheat the griddle: Heat your Blackstone griddle to medium-high heat for about 5 minutes to ensure it is hot enough for proper searing.
  2. Sauté the vegetables: Add some oil on half of the griddle and place the sliced onions and green bell peppers on that side. Stir frequently to prevent uneven browning and cook until the vegetables are halfway done.
  3. Cook the beef: Pour a thin layer of olive oil on the other half of the griddle. Add the shaved ribeye beef, season with salt and pepper based on your preference, then use a large metal spatula to stir and evenly cook the beef until browned and cooked through.
  4. Combine and melt cheese: When both the vegetables and beef are fully cooked, move them together to one side of the griddle. Turn off the heat and layer the mixture with the provolone cheese slices. Cover with a melting dome to let the residual heat melt the cheese completely.
  5. Serve: Scoop portions onto plates and serve immediately. For traditional sandwiches, butter hoagie rolls and toast them quickly on the griddle, then fill with the cheesesteak mixture. Optionally, top with additional salt blend or Cheez Wiz as desired and enjoy!
