Oat Base
- 2/3 cup peanut butter
- 3/4 cup old fashioned (rolled) oats
- 2 tbsp maple syrup
Regular Filling
- 1 tbsp peanut butter (per oat cup)
Protein Filling
- 1/2 cup peanut butter
- 3 tbsp protein powder
Chocolate Coating
- 1 cup chocolate chips (melted)
- Flakey sea salt (optional)
- Prepare the Base Mix: In a bowl, combine the peanut butter and maple syrup until smooth and well mixed.
- Add Oats: Stir in the old fashioned oats until the mixture is evenly combined. This forms the oat base for each cup.
- Form the Base Cups: Using a silicone mold or liners, spoon about 2 tablespoons of the oat mixture into each cavity and press down firmly with a spoon or cookie scoop to create a compact and even base layer.
- Add Filling: For the regular filling, dollop 1 tablespoon of peanut butter on top of each oat base. Alternatively, mix 1/2 cup peanut butter with 3 tablespoons protein powder for a protein-enhanced filling and spread evenly over the bases.
- Freeze First Layer: Place the filled cups into the freezer for 20 minutes to set and firm up the base and filling layers.
- Melt Chocolate: While the cups freeze, melt the chocolate chips with about 2 teaspoons of oil in the microwave. Heat in 30-second increments, stirring well between each, until smooth and fully melted.
