Peanut Butter Mixture
- 1 cup creamy no stir peanut butter
- 3 tablespoons salted butter, melted
- 1 cup powdered sugar
- 2 ½ cups rice krispies cereal
Chocolate Coating
- 12 oz semi sweet chocolate chips or chocolate melting wafers
- Combine Peanut Butter and Butter: Use a KitchenAid mixer or hand mixer to thoroughly blend the creamy peanut butter with the melted salted butter until smooth and well combined.
- Add Rice Krispies: Gently fold in the rice krispies cereal with the peanut butter mixture until evenly incorporated.
- Mix in Powdered Sugar: Gradually add the powdered sugar and mix to combine. When the mixture becomes too stiff to mix with the mixer, switch to a rubber spatula to fully incorporate all ingredients.
- Form Balls: Line a baking sheet with parchment paper. Using a cookie scoop, portion the mixture onto the sheet, then roll each portion into a smooth ball by hand.
- Chill Peanut Butter Balls: Place the formed balls in the refrigerator for at least 30 minutes to firm up and chill thoroughly.
- Melt Chocolate: Microwave the semi sweet chocolate chips or melting wafers in short bursts, stirring frequently until the chocolate is fully melted and smooth.
- Dip in Chocolate: Dip each chilled peanut butter ball into the melted chocolate ensuring it is fully coated, then return it to the parchment-lined baking sheet.
- Final Chill: Refrigerate the chocolate-coated peanut butter balls until the chocolate hardens completely.
- Storage: Store any leftover peanut butter balls in an airtight container in the refrigerator for several days or freeze for several weeks.
Notes
- Use creamy peanut butter for the best texture and easier mixing.
- Ensure peanut butter balls are well chilled before dipping to prevent melting the chocolate coating.
- For a richer taste, use high-quality semi-sweet chocolate chips or melting wafers.
- These no-bake treats are great for quick preparation and can be stored for future enjoyment.
- Optional: Add a pinch of salt or vanilla extract for enhanced flavor.
