This quick and easy recipe balances the rich, buttery texture of salmon with a sweet and savory citrus glaze, making it ideal for a healthy weeknight dinner or a special occasion meal.

Ingredients

Scale

For the Salmon

  • 2 teaspoons olive oil
  • 4 (6 oz) skinless salmon fillets, 1-inch thick
  • Salt and freshly ground black pepper, to taste
  • 2 cloves garlic, minced
  • 2½ teaspoons minced fresh rosemary

For the Glaze

  • ¼ cup chicken broth, divided
  • 1½ teaspoons orange zest
  • ⅔ cup fresh orange juice
  • 1 tablespoon fresh lemon juice
  • 1½ tablespoons honey
  • 2½ teaspoons cornstarch

Instructions

  1. Prepare the Salmon: Heat olive oil in a large non-stick skillet over medium-high heat. Season both sides of the salmon fillets with salt and freshly ground black pepper. Add the salmon to the pan and cook for 3-4 minutes per side until browned and cooked through. Transfer the salmon to a plate and set aside.
  2. Make the Glaze: In the same skillet, add minced garlic and minced fresh rosemary, sautéing for about 20 seconds until fragrant. Add ¼ cup of chicken broth and simmer until most of the liquid is reduced.
  3. Add Citrus and Honey: Stir in the orange zest, fresh orange juice, fresh lemon juice, and honey into the skillet.
  4. Thicken the Glaze: In a small bowl, whisk together the remaining 1 tablespoon of chicken broth and cornstarch to make a slurry. Add this mixture to the skillet. Bring the mixture to a boil and cook for 1 minute until the sauce thickens and becomes glossy.
  5. Combine and Warm: Return the cooked salmon fillets to the pan and spoon the glaze over the top. Let the salmon warm in the glaze for 2 minutes to absorb the flavors.
  6. Serve: Serve the salmon fillets with extra glaze over rice, couscous, or steamed vegetables. Garnish with fresh rosemary if desired for an added aromatic touch.

Notes

  • Ensure the skillet is properly preheated before adding salmon to achieve a crispy, golden crust.
  • Cook salmon until it reaches an internal temperature of 145°F (63°C) for perfect doneness.
  • Let salmon rest for a few minutes after cooking to retain moisture.
  • The glaze can be made thicker or thinner by adjusting cornstarch quantity slightly.
  • Pair with steamed green beans, sautéed spinach, mashed potatoes, or quinoa for a balanced meal.
  • Fresh rosemary is key to flavor, but dried rosemary can be used if fresh is unavailable, reducing quantity by half.
