Steak and Marinade
- 1 lb sirloin steak (about 1-inch thick)
- 3 tbsp olive oil
- 2 garlic cloves (minced)
- 1 tbsp lemon juice (fresh)
- 1 tsp dried oregano
- 1 tsp dried thyme
- ½ tsp salt
- ¼ tsp black pepper
Grains and Toppings

Tzatziki Sauce
- 1 cup Greek yogurt (plain; coconut yogurt for dairy-free)
- ½ cucumber (grated, squeezed dry)
- 1 tbsp lemon juice (fresh)
- 1 garlic clove (minced)
- 1 tbsp fresh dill (chopped)
- Salt & pepper (to taste)
Vinaigrette Dressing
- 3 tbsp olive oil
- 2 tbsp lemon juice (fresh)
- 1 tsp honey (omit for Whole30)
- 1 garlic clove (minced)
- ½ tsp dried oregano
- Salt & pepper (to taste)
- Marinate Steak: In a small bowl, whisk together olive oil, minced garlic, lemon juice, dried oregano, dried thyme, salt, and pepper. Coat the sirloin steak evenly with the marinade, cover, and refrigerate for 30 minutes up to 4 hours to absorb the flavors.
- Make Tzatziki: Combine Greek yogurt, grated cucumber (squeezed of excess water), lemon juice, minced garlic, fresh dill, and salt & pepper in a bowl. Mix well and chill in the refrigerator while preparing other components to let flavors meld.
- Make Dressing: Whisk together olive oil, lemon juice, honey (if using), minced garlic, dried oregano, and salt & pepper until well combined. Set aside for assembly.
- Cook Steak: Heat a skillet over high heat until very hot. Sear the marinated steak for 4 to 5 minutes on each side for medium-rare, or cook to desired doneness. Remove steak from the skillet and let rest for 5-10 minutes, then slice thinly against the grain.
- Assemble Bowl: In serving bowls, layer the cooked grains, roasted chickpeas (if using), sliced steak, cherry tomatoes, diced cucumber, red onion, kalamata olives, feta cheese, and fresh herbs. Drizzle tzatziki and vinaigrette on top or serve on the side. Enjoy immediately.
