Ingredients

Scale

Main Ingredients

  • 1 pound ground chicken
  • 2 tablespoons olive oil
  • 1 small yellow onion, diced
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • ½ cup Kalamata olives, pitted and halved
  • 1 cup baby spinach (or arugula)
  • ½ cup crumbled feta cheese
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon dried oregano
  • 1 tablespoon lemon juice
  • Salt and black pepper, to taste
  • ½ teaspoon paprika (optional for smoky flavor)

Instructions

  1. Heat the oil and sauté onions: Heat olive oil in a large skillet over medium heat. Add the diced onion and cook until translucent, about 3–4 minutes, stirring occasionally to soften them evenly.
  2. Cook garlic and chicken: Add the minced garlic and ground chicken to the skillet. Cook until the chicken is browned and fully cooked through, breaking it up with a spatula to ensure even cooking and no large clumps remain.
  3. Add tomatoes, olives, and seasonings: Stir in the halved cherry tomatoes, Kalamata olives, dried oregano, paprika (if using), salt, and black pepper. Continue cooking for another 3–4 minutes until the tomatoes soften and release their juices, melding flavors together.
  4. Wilt the greens: Add the baby spinach (or arugula) to the skillet and cook just until wilted, about 1–2 minutes, stirring gently to incorporate evenly without overcooking.
  5. Finish with lemon and parsley: Remove the skillet from heat and stir in fresh lemon juice and chopped parsley to brighten the dish with fresh, zesty notes.
  6. Serve with feta topping: Sprinkle crumbled feta cheese over the hot dish and serve immediately for a warm, savory Mediterranean meal.

Notes

  • You can substitute ground turkey or beef for ground chicken if preferred.
  • Use baby arugula instead of spinach for a peppery bite.
  • For a smoky flavor, don’t skip the paprika.
  • Serve with crusty bread, rice, or over pasta for a complete meal.
  • Leftovers store well refrigerated for up to 3 days.
