Ingredients

Scale

For the Marinade:

  • 1/4 cup olive oil
  • 1/4 cup soy sauce
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons Worcestershire sauce
  • 2 cloves garlic, minced
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon smoked paprika
  • Salt and freshly ground black pepper to taste

For the Skewers:

  • 1 pound button mushrooms, cleaned and stems trimmed
  • Wooden or metal skewers

Instructions

  1. Prepare the Marinade: In a medium bowl, combine olive oil, soy sauce, balsamic vinegar, and Worcestershire sauce. Stir well, then add minced garlic, Dijon mustard, and honey or maple syrup. Mix thoroughly, then sprinkle in dried thyme, rosemary, smoked paprika, salt, and black pepper. Whisk until smooth and well blended.
  2. Marinate the Mushrooms: Place cleaned mushrooms in a resealable plastic bag or shallow dish. Pour the marinade over, ensuring all mushrooms are evenly coated. Seal or cover and refrigerate for at least 30 minutes, preferably 2–3 hours for best flavor.
  3. Soak the Skewers: If using wooden skewers, soak them in water for at least 30 minutes to prevent burning. Metal skewers can be used as is.
  4. Preheat the Grill: Heat grill to medium-high. For charcoal grills, light coals until covered with white ash; for gas grills, turn burners to medium-high and close lid.
  5. Assemble the Skewers: Remove mushrooms from marinade and thread onto skewers. Optionally alternate with vegetables like bell peppers or cherry tomatoes, leaving space between mushrooms for even cooking.
  6. Grill the Mushrooms: Place skewers on the grill and cook for 10–12 minutes, turning occasionally to cook evenly. Brush with remaining marinade while grilling for extra flavor until mushrooms are tender and slightly charred.
  7. Serve and Enjoy: Remove from grill, let cool slightly, and arrange on a platter. Garnish with fresh chopped parsley and serve as an appetizer, side, or main dish.

Notes

  • Use firm, fresh mushrooms without sliminess or dark spots for best texture and flavor.
  • Use similarly sized mushrooms to ensure even cooking; cut larger mushrooms in half.
  • Marinate mushrooms for 2–3 hours or overnight for deeper flavor; minimum 30 minutes if short on time.
  • Brush grill grates with oil before cooking to prevent sticking.
  • Grill over medium-high heat to avoid burning; adjust heat as necessary.
  • Leave space between mushrooms on skewers for even heat circulation.
  • Add fresh herbs like basil, cilantro, or chives before serving for extra aroma.
  • Customize marinade with additional spices such as hot sauce or grated ginger for unique flavors.
  • Soak wooden skewers well and/or wrap tips with foil to prevent burning.
  • Avoid over-marinating to prevent mushrooms from becoming mushy.
  • Ensure regular turning of skewers on the grill to avoid uneven cooking.
