Korean Beef Noodles is a comforting and flavorful slow-cooked dish featuring tender beef chuck simmered in a savory and slightly sweet broth with authentic Korean ingredients, served over soft noodles and garnished with fresh green onions, sesame seeds, and cilantro.

Ingredients

Scale

Beef and Broth

  • 2 pounds beef chuck, cut into 1-inch pieces
  • 4 cups beef broth
  • 2 cups water
  • 1 cup soy sauce
  • ¼ cup brown sugar
  • 2 tablespoons ginger, minced
  • 4 cloves garlic, minced
  • 1 tablespoon sesame oil
  • 1 teaspoon black pepper
  • 1 tablespoon gochujang (Korean chili paste)

Noodles

  • 1 pound fresh or dried noodles (such as udon or ramen)

Garnishes

  • 3 green onions, sliced for garnish
  • Sesame seeds for topping (optional)
  • Fresh cilantro for garnish (optional)

Instructions

  1. Prepare the Beef: Season the beef chunks with black pepper for added flavor, ensuring even coating on all pieces.
  2. Mix the Sauce: In a bowl, combine beef broth, soy sauce, brown sugar, minced ginger, minced garlic, sesame oil, and gochujang. Stir thoroughly until the brown sugar dissolves completely.
  3. Place in Slow Cooker: Transfer the seasoned beef into the slow cooker. Pour the prepared sauce mixture evenly over the beef, making sure all pieces are submerged.
  4. Cook: Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours, until the beef becomes tender and easily shredded.
  5. Prepare Noodles: Approximately 15-20 minutes before serving, cook the noodles according to the package instructions. Drain well and set aside.
  6. Combine: Once the beef is tender, add the cooked noodles to the slow cooker. Gently stir to combine, allowing the noodles to absorb some of the flavorful broth.
  7. Serve: Portion the beef and noodle mixture into bowls. Garnish generously with sliced green onions, sesame seeds, and fresh cilantro as desired to enhance flavor and presentation.

Notes

  • For a spicier dish, increase the amount of gochujang according to preference.
  • If you prefer, substitute beef chuck with short ribs for richer flavor.
  • Fresh noodles provide a softer texture, while dried noodles offer more bite; choose based on preference.
  • Garnishes like sesame seeds and cilantro are optional but add authentic Korean flavor and visual appeal.
  • Leftover beef broth can be stored and used as a base for soups or stews.
