Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350°F (175°C) and lightly oil a loaf pan. Line the pan with a strip of parchment paper to make removing the bread easier.
  2. Mix Dry Ingredients: In a bowl, whisk together the gluten-free all-purpose flour, baking powder, baking soda, and salt until well combined.
  3. Mix Wet Ingredients: In a separate bowl, beat the eggs (or flax eggs for a vegan option). Add the melted and cooled coconut oil, coconut sugar, dairy-free milk, vanilla extract, and lemon zest if using. Mix until the batter is smooth and combined.
  4. Combine Wet and Dry Mixtures: Pour the wet mixture into the dry ingredients. Gently fold them together using a spatula, being careful not to overmix to maintain a tender texture.
  5. Assemble the Loaf: Pour half of the batter into the prepared loaf pan. Dot half of the jam evenly over the batter, then use a skewer or knife to swirl the jam gently through the batter.
  6. Add Remaining Batter and Jam: Pour the remaining batter over the swirled layer. Top with the remaining jam and swirl again gently to create a beautiful marbled effect throughout the bread.
  7. Bake: Place the loaf pan in the preheated oven and bake for 45 to 55 minutes. Start checking for doneness at 40 minutes by inserting a toothpick into the center; it should come out clean or with a few moist crumbs.
