Ingredients

Scale

Vegetables

  • 1 large onion, chopped
  • 2 garlic cloves, minced
  • 3 medium carrots, sliced
  • 2 medium potatoes, diced
  • 1 cup green beans, chopped
  • 1 cup peas (fresh or frozen)
  • 1 bell pepper, diced

Liquids & Seasoning

  • 1 tablespoon olive oil
  • 4 cups vegetable broth
  • 1 tablespoon tomato paste
  • 1 tablespoon soy sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat Oil: In a large pot, heat olive oil over medium-high heat to prepare the base for sautéing.
  2. Sauté Onions and Garlic: Add the chopped onion and minced garlic to the hot oil. Cook for about 5 minutes, stirring occasionally, until the onions turn translucent and fragrant.
  3. Add Carrots and Potatoes: Stir in the sliced carrots and diced potatoes. Continue cooking for another 5 minutes to slightly soften the vegetables.
  4. Incorporate Vegetables: Add the chopped green beans, peas, and diced bell pepper to the pot. Mix everything well to evenly combine the ingredients.
  5. Mix Broth and Seasonings: Pour in the vegetable broth. Stir in the tomato paste, soy sauce, dried thyme, and dried rosemary to infuse the stew with rich flavors.
  6. Bring to a Boil: Turn the heat up to high and bring the mixture to a rolling boil.
  7. Simmer: Reduce heat to low, cover the pot with a lid, and let the stew simmer gently for 30 to 40 minutes. Stir occasionally until all the vegetables are tender and cooked through.
  8. Season to Taste: Add salt and pepper according to your preference, adjusting the flavors as needed.
  9. Garnish and Serve: Remove the stew from heat. Sprinkle freshly chopped parsley on top for garnish and serve warm.
