Ingredients

Scale

Chicken and Seasoning

  • 4 boneless, skinless chicken breasts (about 6 oz each, pounded to even 1-inch thickness if needed)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Toppings

  • 6 oz feta cheese, crumbled (preferably block feta crumbled yourself)
  • 2 tablespoons hot honey (Mike’s Hot Honey recommended, or homemade)
  • 1 tablespoon fresh parsley, chopped (optional, for garnish)

Instructions

  1. Preheat and Prepare Chicken: Preheat your oven to 400°F (200°C). Pat the chicken breasts completely dry with paper towels to ensure a golden-brown sear. If thicker than 1 inch, gently pound to even thickness for consistent cooking.
  2. Season Chicken: In a small bowl, combine olive oil, garlic powder, smoked paprika, salt, and black pepper. Rub this spice mixture thoroughly over every surface of the chicken breasts, including the sides, for even flavor.
  3. Sear Chicken: Heat a 10-12 inch oven-safe skillet over medium-high heat for 2-3 minutes. Add the chicken breasts and sear undisturbed for 3-4 minutes per side until a deep golden-brown crust forms.
  4. Add Feta and Bake: Sprinkle crumbled feta evenly over each chicken breast. Transfer the skillet directly to the preheated oven and bake for 15-20 minutes, or until the internal temperature reaches 165°F and the feta is melted and slightly golden.
  5. Rest and Finish: Remove skillet from oven and let chicken rest for 5 minutes to redistribute juices. Drizzle hot honey over the chicken while still hot to allow it to soak in. Garnish with fresh parsley if desired and serve immediately.

Notes

  • If you don’t have hot honey, make your own by mixing 2 parts honey with 1 part hot sauce or by adding red pepper flakes to regular honey.
  • For extra flavor, marinate chicken in the spice mixture for 30 minutes before cooking.
  • Chicken thighs can be substituted for breasts if preferred.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Reheat gently in a 325°F oven for about 10 minutes or use 50% power in microwave covered to prevent drying out.
