Ingredients

Scale

For the Chicken Wings

  • 2 pounds chicken wings
  • 3 tablespoons potato starch
  • 1 tablespoon baking powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ¼ teaspoon paprika
  • oil spray

For the Honey Lemon Pepper Sauce

  • ½ cup honey
  • 1 lemon zested
  • ¼ cup lemon juice, or more
  • 1 tablespoon minced garlic
  • 1 tablespoon butter
  • 12 teaspoons ground pepper
  • 1 pinch salt

Instructions

  1. Preheat and prepare wings: Heat the oven to 450°F. Pat dry the chicken wings with paper towels if they are moist to ensure crispiness.
  2. Coat the wings: In a large bowl, add the potato starch, baking powder, garlic powder, onion powder, and paprika to the chicken wings. Toss thoroughly to coat the wings evenly with the seasoning mix.
  3. Prepare baking sheet: Lightly spray oil onto a parchment-lined sheet pan. Arrange the coated chicken wings in a single layer on the pan. Spray the tops of the wings lightly with oil as well to promote browning.
  4. Bake the wings: Reduce the oven temperature to 425°F and bake the wings for 35 to 40 minutes depending on size. Flip the wings halfway through baking and spray a little more oil on top for extra crispiness.
  5. Make the honey lemon pepper sauce: While the wings bake, combine honey, lemon juice, lemon zest, minced garlic, butter, salt, and ground pepper in a small saucepan over medium heat. Stir and simmer the sauce for 3 to 5 minutes until well combined and slightly thickened. Set aside a small portion of the sauce for dipping if desired.
  6. Toss wings in sauce: Once wings are cooked and crispy, transfer them to a large bowl and toss them thoroughly with the honey lemon pepper sauce to coat evenly.
  7. Serve: Serve immediately with extra sauce on the side for dipping. Enjoy your flavorful honey lemon pepper wings!

Notes

  • Patting the wings dry before coating helps them crisp up better in the oven.
  • Adjust lemon juice quantity in the sauce to your preferred level of tanginess.
  • Using baking powder instead of baking soda helps achieve a crispy skin without altering flavor.
  • For extra crispiness, consider broiling the wings for 2-3 minutes after baking, watching carefully to avoid burning.
  • If you prefer less spicy wings, reduce the amount of ground pepper in the sauce.
