For the Stir-Fry
- 1 lb (450g) flank steak, thinly sliced against the grain (or substitute chicken, tofu, or shrimp)
- 8 oz (225g) rice noodles (or udon, soba, or egg noodles)
- 1 red bell pepper, thinly sliced
- 1 large carrot, julienned
- 4 green onions, chopped (whites and greens separated)
- 2 tbsp vegetable oil, divided
Hoisin Sauce Mixture
- ¼ cup (60ml) hoisin sauce (check labels for gluten-free option)
- 2 tbsp soy sauce (or tamari for gluten-free)
- 1 tbsp oyster sauce (optional but adds depth)
- 1 tbsp rice vinegar
- 1 tbsp honey (or brown sugar)
- 2 garlic cloves, minced
- 1 tbsp fresh ginger, grated
- 1 tsp sesame oil
Optional Garnishes
- Toasted sesame seeds
- Fresh cilantro
- Lime wedges
- Chili crisp (for heat lovers)
- Prep the Noodles: Cook the noodles according to package instructions until tender. Drain and rinse under cold water to stop cooking. Toss them with 1 tsp sesame oil to prevent sticking and set aside.
- Whisk the Sauce: In a small bowl, combine hoisin sauce, soy sauce, oyster sauce, rice vinegar, honey, minced garlic, and grated ginger. Mix well and taste; add a pinch of salt if needed to balance flavors.
- Sear the Beef: Heat 1 tbsp vegetable oil in a large skillet or wok over high heat. Add the sliced beef in a single layer, working in batches if necessary, and sear each side for 1–2 minutes until browned but still pink inside. Remove the beef and set aside.
- Stir-Fry the Vegetables: Add the remaining 1 tbsp vegetable oil to the skillet. Toss in the red bell pepper slices, julienned carrot, and the white parts of the green onions. Stir-fry for 2–3 minutes until the vegetables are crisp-tender.
- Bring It All Together: Reduce the heat to medium. Add the cooked noodles, seared beef, and the prepared sauce to the skillet. Toss vigorously for 1–2 minutes until everything is evenly coated and glossy.
- Finishing Touches: Remove the skillet from heat. Stir in the green parts of the chopped green onions and drizzle with the remaining sesame oil. Add optional garnishes such as toasted sesame seeds, fresh cilantro, lime wedges, or chili crisp as desired before serving.
Notes
- Gluten-Free Option: Use gluten-free hoisin sauce and tamari instead of soy sauce.
- Spice It Up: Add 1 tsp sriracha or chili crisp to the sauce for a spicy kick.
- No Oyster Sauce: Substitute with ½ tsp fish sauce or simply omit it.
- Slice Smart: Freeze beef for 30 minutes before slicing for easier thin cuts.
- Don’t Overcook Noodles: They’ll soften more when mixed with sauce during stir-fry.
- Marinate Hack: Let the beef sit in the sauce for 10 minutes before cooking to enhance flavor.
- Veggie Swap: Broccoli, snap peas, or mushrooms can be used instead of bell pepper.
- Storage: Store leftovers in an airtight container in fridge for 3–4 days, reheat in a skillet with a splash of water.
- Freezing: Freeze sauce and cooked beef separately for up to 1 month.
