These Healthy Buckeyes are a delicious and wholesome twist on the classic peanut butter and chocolate treat. Made with almond flour, natural peanut butter, and sweetened with maple syrup, these no-bake snacks are gluten-free, dairy-free, and perfect for a nutritious indulgence. Coated partially in melted dark chocolate and coconut oil, they offer a creamy center and a rich chocolate exterior, making them a perfect guilt-free snack or dessert.

Ingredients

Scale

Peanut Butter Mixture

  • 1 1/3 cup almond flour
  • 1 cup natural peanut butter
  • 1/4 tsp salt (only if peanut butter isn’t salted)
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract

Chocolate Coating

  • 1 cup chocolate chips
  • 1 tsp coconut oil

Instructions

  1. Mix Ingredients: In a bowl, thoroughly combine almond flour, natural peanut butter, salt (if using unsalted peanut butter), maple syrup, and vanilla extract until the mixture is uniform and can hold together.
  2. Form Balls and Chill: Roll the mixture into small balls, about 1 inch in diameter, and place them on a tray. Refrigerate the balls for 30 minutes to firm up.
  3. Melt Chocolate: In a small microwave-safe bowl, melt the chocolate chips and coconut oil together in 30-second increments, stirring between each until smooth.
  4. Dip Buckeyes in Chocolate: Using a fork, dip each chilled peanut butter ball into the melted chocolate, covering approximately two-thirds of each ball. Lift them out and place back onto the tray lined with parchment or wax paper.
  5. Chill to Set: Refrigerate the dipped buckeyes for at least 15 minutes or until the chocolate is firm.
  6. Store Properly: Keep the buckeyes stored in the refrigerator to maintain their shape and freshness until ready to enjoy.

Notes

  • You can substitute oat flour for almond flour, but start with 3/4 cup and add more gradually as needed to achieve a rollable consistency.
  • If your peanut butter is salted, omit additional salt for balanced flavor.
  • Use dark chocolate chips for a richer taste and to reduce sweetness.
  • These buckeyes are best stored refrigerated and consumed within one week for optimal freshness.
