Ingredients

Scale

Vegetables

  • 1 small head cauliflower, cut into florets
  • 8 oz mushrooms, sliced
  • 4 cloves garlic, minced

Seasonings & Oils

  • 2 tbsp olive oil
  • 2 tbsp butter
  • ½ tsp smoked paprika
  • ½ tsp Italian seasoning
  • Salt & black pepper, to taste
  • 1 tbsp lemon juice

Optional Garnish

  • ¼ cup Parmesan cheese (optional)
  • Fresh parsley, for garnish

Instructions

  1. Heat the Skillet: In a large skillet over medium heat, add the olive oil and butter. Allow the butter to melt completely and the mixture to heat up before proceeding to the next step.
  2. Sauté the Veggies: Add the cauliflower florets to the skillet and cook for 5 to 6 minutes until they start to turn golden and slightly tender. Then add the sliced mushrooms and continue cooking for an additional 4 to 5 minutes until the mushrooms soften and release their juices.
  3. Add Garlic & Seasonings: Stir in the minced garlic, smoked paprika, Italian seasoning, salt, and black pepper. Cook everything together for another 2 minutes until the garlic becomes fragrant and the spices are well incorporated.
  4. Finish & Serve: Drizzle the lemon juice over the skillet contents and sprinkle with Parmesan cheese if using. Toss gently to combine. Garnish with freshly chopped parsley and serve the dish hot for best flavor.

Notes

  • For a vegan version, substitute the butter with extra olive oil and omit the Parmesan cheese or use a vegan cheese alternative.
  • You can add other vegetables such as bell peppers or zucchini for variety.
  • Adjust the amount of garlic based on your preference for a milder or stronger flavor.
  • Serve as a side dish or add cooked protein like grilled chicken or tofu to make it a complete meal.
  • Ensure the skillet is hot before adding the vegetables to get a nice caramelization.
