Brownies
- 1/2 cup all-purpose flour
- 2 large eggs
- 1/3 cup unsweetened cocoa powder
- 1 teaspoon vanilla extract
- 1 stick unsalted butter (113g)
- 2 teaspoons coffee extract or 1 tablespoon instant coffee
- 1 cup granulated sugar
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
Coffee Frosting
- 2–4 tablespoons heavy whipping cream
- 1 1/2 teaspoons instant coffee granules
- 2 cups powdered sugar (about 240g)
- 1/3 cup unsalted butter (76g)
- Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Prepare an 8-inch baking dish by coating it with non-stick spray or lining it with parchment paper, then lightly spray the parchment for easier brownie removal.
- Melt Butter: In a microwave-safe bowl, melt the butter in short intervals until fully melted. Transfer the melted butter to a large mixing bowl to begin combining the wet ingredients.
- Combine Wet Ingredients: Add the granulated sugar, eggs, and vanilla extract to the melted butter. Stir thoroughly until the mixture is smooth and well combined.
- Add Dry Ingredients: Gradually sift in the all-purpose flour, cocoa powder, salt, and baking powder to the wet mixture. Stir carefully until the batter is smooth and no lumps remain.
- Bake the Brownies: Evenly spread the brownie batter into the prepared baking dish. Place it in the preheated oven and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean or with just a few moist crumbs.
- Cool Completely: Remove the brownies from the oven and allow them to cool completely in the pan on a wire rack before frosting, which helps the frosting to set perfectly.
- Prepare Coffee Cream: Dissolve the instant coffee granules in the heavy whipping cream in a small bowl. Set aside to infuse flavor.
- Make Frosting Base: In a separate mixing bowl, beat the unsalted butter until it becomes light, fluffy and creamy, about 3-5 minutes.
- Add Sugar and Coffee Cream: Gradually add the powdered sugar to the butter, mixing thoroughly to combine. Slowly pour in 2 tablespoons of the coffee-infused cream and beat until smooth. Add more cream, one tablespoon at a time, to reach desired frosting consistency.
- Frost Brownies and Serve: Generously spread the coffee frosting over the cooled brownies. Cut into squares and serve to enjoy a perfect balance of chocolate and coffee flavor.
Notes
- Use high-quality cocoa powder and fresh coffee extract or instant coffee for best taste.
- Ensure the brownies are completely cooled before frosting to prevent melting.
- Adjust coffee intensity in frosting by adding more or less instant coffee according to your preference.
- If desired, store brownies in an airtight container at room temperature for up to 3 days or refrigerated for up to one week.
- For a stronger coffee kick, replace heavy cream with espresso shots.
