  • 2 cups sour cream
  • 1 1.5-ounce packet ranch seasoning
  • 1/4 cup pickle juice
  • 1 cup chopped pickles (reserve some for topping)

For Toasted Panko

  • 1 tbsp butter
  • 1/2 cup panko breadcrumbs (reserve some for topping)

Optional Toppings

  • Dill, for garnish

Instructions

  1. Toast the Panko: Melt 1 tablespoon of butter in a large skillet over medium-low heat. Add 1/2 cup panko breadcrumbs and toast them, stirring frequently, until they turn golden brown, about 3 to 4 minutes. Be careful not to burn them. Remove from heat and set aside.
  2. Prepare the Dip Base: Reserve a small portion of the toasted panko and chopped pickles for topping. In a mixing bowl, combine the remaining toasted panko, chopped pickles, 2 cups sour cream, 1.5-ounce packet of ranch seasoning, and 1/4 cup pickle juice. Stir well until all ingredients are fully incorporated to create the dip.
  3. Serve or Store: If serving immediately, transfer the dip to a serving bowl and top with the reserved chopped pickles, toasted panko, and a sprinkle of dill if desired. If serving later, store the dip without the toppings in an airtight container in the refrigerator. When ready to serve, stir the dip briefly, transfer to a serving bowl, and add the reserved pickle, panko, and dill toppings.
