Ingredients

Scale

Wet Ingredients

  • 2/3 cup unsalted butter, softened
  • 1/2 cup Nutella
  • 2 tsp vanilla extract
  • 2 eggs
  • 1 egg yolk

Dry Ingredients

  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 tsp baking soda
  • 2 1/2 cups all-purpose flour
  • 1/2 tsp kosher salt

Add-ins & Toppings

  • 1/2 cup chopped hazelnuts (plus extra for coating)
  • 1 cup chocolate chips (plus extra for topping)
  • Nutella for melting and topping

Instructions

  1. Cream Butter and Nutella: In a large mixing bowl, combine the softened butter and Nutella. Use an electric hand mixer to beat them together for 2-3 minutes until the mixture is creamy and light in color.
  2. Add Sugars and Flavorings: Add the brown sugar, granulated sugar, kosher salt, and vanilla extract to the bowl. Mix everything well for 1-2 minutes until fully combined.
  3. Incorporate Eggs: Add the two whole eggs and the additional egg yolk to the mixture. Beat until the batter is creamy and well combined.
  4. Mix Dry Ingredients: Gradually add the flour, baking soda, and chopped hazelnuts to the wet ingredients. Mix with the hand mixer until the mixture is almost combined.
  5. Add Chocolate Chips: Fold in the chocolate chips gently with a spatula until evenly distributed without overmixing.
  6. Chill the Dough: Cover the bowl tightly with plastic wrap and refrigerate the dough for at least one hour, or preferably overnight, to enhance the flavors and firm up the dough.
  7. Form the Cookies: Once chilled, scoop the dough into 1 ½ tablespoon-sized balls using a cookie scoop or spoon. Roll each cookie dough ball in chopped hazelnuts to coat them completely.
  8. Bake: Place the coated dough balls spaced apart on a baking sheet lined with parchment paper. Bake in a preheated oven at 180°C (350°F) for 11-12 minutes until the edges are lightly golden.
  9. Add Nutella Dollops: While the cookies are still warm, melt some Nutella and spoon small dollops on top of each cookie for added richness and decoration.
  10. Cool: Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely before serving.

Notes

  • For best texture and flavor, chill the dough overnight.
  • You can substitute regular sugar for brown sugar if needed but the cookies will be less moist.
  • Using a cookie scooper ensures evenly sized cookies for uniform baking.
  • Store cookies in an airtight container to maintain freshness for up to 5 days.
  • Make sure butter is softened but not melted for proper creaming.
  • If hazelnuts are not available, toasted chopped almonds can be used as an alternative.
