Perfect for busy weeknights, it requires minimal prep and cooks to creamy, cheesy perfection with simple ingredients.

Ingredients

Scale

Chicken and Sauce

  • Olive oil spray
  • 1 ½ lbs chicken breast (about 4 medium breasts)
  • 2 cups marinara sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion granules
  • 1 teaspoon Italian seasoning mix
  • ½ teaspoon paprika
  • ¼ teaspoon red chili flakes
  • 1 ½ cups chicken broth

Main Ingredients

  • 1 lb cheese tortellini
  • 1 cup mozzarella cheese, shredded
  • ½ cup heavy cream
  • 2 cups baby spinach
  • ⅓ cup Parmesan cheese, grated

Instructions

  1. Prepare the Slow Cooker: Spray the inside of the slow cooker with olive oil spray to prevent sticking and make cleanup easier.
  2. Arrange Chicken: Place 1 ½ lbs of chicken breasts in a single layer at the bottom of the slow cooker for even cooking.
  3. Add Sauce and Spices: Pour 2 cups marinara sauce over the chicken, then sprinkle garlic powder, onion granules, Italian seasoning, paprika, and red chili flakes evenly.
  4. Cook Chicken: Cover and cook on LOW for about 4 hours until the chicken is fully cooked and tender.
  5. Shred Chicken: Use two forks to shred the chicken directly in the slow cooker for easy mixing.
  6. Mix Chicken with Sauce: Stir the shredded chicken back into the sauce to combine flavors well.
  7. Add Tortellini and Dairy: Add 1 lb cheese tortellini, 1 cup shredded mozzarella cheese, and ½ cup heavy cream to the pot, mixing thoroughly.
  8. Cook Tortellini: Continue cooking on LOW for an additional 30 minutes, ensuring the pasta is tender and the cheese is melted.
  9. Add Spinach: Stir in 2 cups of baby spinach and cook for another 10 minutes until wilted and heated through.
  10. Finish and Serve: Sprinkle ⅓ cup grated Parmesan cheese on top, taste the dish, and adjust seasonings if needed before serving.

Notes

  • You can substitute heavy cream with half-and-half for a lighter version, but the dish will be less rich.
  • Use fresh spinach for best texture; frozen spinach can be substituted but should be well-drained.
  • Make sure to cook on LOW as cooking on HIGH may overcook the chicken and tortellini.
  • For a spicier kick, add extra red chili flakes according to your taste preference.
  • Leftovers can be refrigerated for up to 3 days and reheated gently on the stove or microwave.
