Instructions

  1. Sauté Vegetables: Heat butter over medium heat until melted. Stir in poultry seasoning, black pepper, and salt. Add celery and onions, cooking until softened but not browned. Allow the mixture to cool completely.
  2. Mix Ingredients: Place bread cubes in a large bowl. Add the cooled celery and onion mixture, chopped parsley, and fresh herbs if using.
  3. Add Broth and Eggs: Gradually add chicken broth a little at a time just to moisten the bread mixture, stirring gently. You may not need all the broth depending on your bread texture. Then stir in the eggs until combined.
  4. Optional Refrigeration: Cover the stuffing and refrigerate overnight if preparing ahead of time. This step enhances the flavors.
  5. Prepare Slow Cooker: Grease a 5-6 quart slow cooker well. Place the stuffing mixture inside and turn the slow cooker to high heat for 30 minutes.
  6. Cook Stuffing: After the initial high heat, reduce the temperature to low and cook for an additional 3 to 4 hours, or until the stuffing is hot and cooked through.
