  • 2 tablespoons Olive Oil
  • 2 cups Chicken Broth
  • ½ cup Heavy Whipping Cream
  • 1 teaspoon Chicken Bouillon Powder
  • 1/3 cup All Purpose Flour

Instructions

  1. Cook the Orzo and Chicken: Cook the orzo according to the package instructions until al dente. Meanwhile, season the chicken breasts evenly with onion powder, garlic powder, paprika, salt, and black pepper. Heat a splash of olive oil in a skillet over medium-high heat. Cook the chicken until it reaches an internal temperature of 165°F (74°C). Remove from heat and dice into bite-sized pieces.
  2. Sauté the Vegetables and Make Roux: In a large skillet over medium-high heat, melt the butter together with olive oil. Add the finely diced onion, carrots, and celery. Sauté for 4-5 minutes until the vegetables soften but do not brown. Lower the heat to low and sprinkle the all-purpose flour evenly over the vegetables. Whisk constantly to combine and form a smooth paste (roux).
  3. Add Liquids and Thicken Sauce: Continue whisking the roux for 2-3 minutes to cook off the raw flour taste. Gradually pour in the chicken broth and heavy whipping cream, whisking continuously to prevent lumps. Add chicken bouillon powder, and stir until the mixture thickens into a creamy sauce.
