Instructions

  1. Heat the oil and season chicken: Heat 2 tablespoons of avocado oil in a large skillet over medium heat, swirling the oil to coat the pan evenly. Meanwhile, generously season both sides of each chicken breast with salt and freshly cracked black pepper to your taste.
  2. Pan-sear the chicken: Once the oil is hot and shimmering, add the chicken breasts to the skillet. Sear for 4 minutes on one side, then flip the chicken and add another tablespoon of avocado oil. Continue searing for an additional 4 minutes until the chicken is cooked through and no longer pink. If the breasts are large or still not firm, cover the skillet with a lid and reduce heat to low; continue cooking, checking firmness every 2 minutes until the chicken feels springy and firm to the touch.
  3. Rest the chicken: Transfer the fully cooked chicken breasts to a plate and set aside. If there are dark spots or charred bits in the skillet, wipe it out with a paper towel to prevent bitterness in the sauce.
  4. Deglaze the pan: Pour ½ cup of dry white wine or chicken broth into the hot skillet. Use a spatula to scrape up any stuck bits from the bottom. Increase the heat and bring the liquid to a boil, then add 1 cup of chicken broth. Cook the liquid until it has reduced by approximately 50%.
  5. Add Boursin cheese sauce: Once the broth has reduced by half, add the pieces of Boursin cheese to the skillet. Whisk continuously until the cheese melts completely and forms a smooth, creamy sauce.
  6. Finish and serve: Return the cooked chicken breasts to the skillet, spooning the sauce over them. Cook only until the chicken is warmed through. Garnish with chopped chives if desired. Serve warm with plenty of sauce over your choice of mashed potatoes, pasta, mashed cauliflower, or rice.
