Ingredients

Scale

Brown Sugar Cinnamon Mixture

  • 1/3 cup light brown sugar
  • 1 teaspoon ground cinnamon

Apple Mixture

  • 2 apples, peeled and chopped
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon

Batter

  • 2/3 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 1/2 teaspoons vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 3/4 teaspoons baking powder
  • 1/2 cup milk or almond milk

Glaze

  • 1/2 cup powdered sugar
  • 1 to 3 tablespoons milk or cream

Instructions

  1. Preheat the oven: Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper to prevent sticking.
  2. Prepare the cinnamon sugar mixture: In a small bowl, combine 1/3 cup light brown sugar with 1 teaspoon ground cinnamon. Set this mixture aside for layering later.
  3. Prepare the apples: Toss the peeled and chopped apples with 2 tablespoons granulated sugar and 1 teaspoon ground cinnamon in another bowl. Let them sit while you prepare the batter.
  4. Cream butter and sugar: In a medium bowl, cream together 2/3 cup granulated sugar and 1/2 cup softened unsalted butter until the mixture is smooth and fluffy.
  5. Add eggs and vanilla: Beat in the eggs, one at a time, ensuring each is fully incorporated before adding the next. Stir in 1 1/2 teaspoons of vanilla extract for flavor.
  6. Mix dry ingredients: In a separate bowl, whisk together 1 1/2 cups all-purpose flour and 1 3/4 teaspoons baking powder until well combined.
  7. Combine wet and dry ingredients: Gradually add the flour mixture to the creamed mixture, alternating with 1/2 cup milk (or almond milk). Begin and end with the flour mixture. Mix until just combined to avoid overmixing.
  8. Assemble the loaf: Pour half of the batter into the prepared loaf pan. Spread half of the apple mixture evenly over the batter, then sprinkle half of the brown sugar-cinnamon mixture.
  9. Repeat layers: Repeat with the remaining batter, apple mixture, and brown sugar-cinnamon mix, layering carefully.
  10. Create the swirl effect: Press the apples lightly into the batter using the back of a spoon or spatula. Use a knife to gently swirl the cinnamon sugar mixture into the batter for a marbled effect.
  11. Bake the bread: Bake in the preheated oven for 60 to 70 minutes, or until a toothpick inserted into the center comes out clean, indicating the bread is fully cooked.
  12. Cool the loaf: Allow the bread to cool in the pan for 15 minutes. Then, transfer it to a wire rack to cool completely before glazing.
  13. Prepare and apply the glaze: Mix 1/2 cup powdered sugar with 1 to 3 tablespoons of milk or cream until smooth. Drizzle this glaze over the cooled bread for a sweet finishing touch.

Notes

  • You can substitute almond milk with any dairy or plant-based milk according to your preference.
  • For a nuttier texture, add chopped walnuts or pecans along with the apples.
  • Make sure not to overmix the batter to keep the bread tender.
  • The glaze can be adjusted in thickness by varying the amount of milk or cream.
  • Store the bread in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
