Instructions

  1. Bring Ingredients to Room Temperature: Ensure the cream cheese or coconut butter and butter (or coconut butter) are soft by bringing them to room temperature. This helps achieve a smooth mixture.
  2. Mix Ingredients Until Smooth: Combine the softened cream cheese or coconut butter, butter, powdered sugar or erythritol, and instant coffee in a bowl. Use a hand mixer for the best smooth consistency, though you can stir with a fork if needed.
  3. Shape the Truffles: Spread the mixture into a container or chill it in the freezer for a few minutes until it firms up enough to scoop. Use a mini cookie scoop to place small balls of the mixture onto a parchment-lined plate.
  4. Freeze the Balls: Freeze the formed balls until they become firm, allowing them to set properly.
  5. Optional Chocolate Dip: If desired, melt the chocolate chips and optionally stir in half a teaspoon of oil for a smoother texture.
