For the Blondies:

  • 150g (1 ¼ cups) all-purpose flour
  • 1 tsp cinnamon

  • 115g (½ cup) unsalted butter, melted
  • 150g (¾ cup) brown sugar, packed
  • 50g (¼ cup) granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract

For the Cinnamon Sugar Topping:

  • 2 tbsp granulated sugar
  • 1 tsp cinnamon

Instructions

  1. Prepare the Oven & Pan: Preheat your oven to 175°C (350°F). Line an 8×8-inch (20×20 cm) baking pan with parchment paper or lightly grease it to prevent sticking.
  2. Make the Blondie Batter: In a large bowl, whisk together melted butter, brown sugar, and granulated sugar until the mixture is smooth and well combined. Add the egg and vanilla extract, mixing thoroughly. Stir in the flour, cinnamon, baking powder, and salt just until combined, being careful not to overmix to keep the blondies soft and chewy.
  3. Spread & Add Topping: Pour the batter evenly into the prepared baking pan and smooth the top. In a small bowl, combine the granulated sugar and cinnamon for the topping, then sprinkle this mixture evenly over the batter.
  4. Bake & Cool: Bake the blondies for 20-25 minutes until the edges are set and a toothpick inserted in the center comes out with a few moist crumbs. Remove the pan from the oven and allow the blondies to cool in the pan for 10 minutes before transferring them to a wire rack. Once cooled, slice into 16 squares and serve.
