Ingredients

Scale

Banana Bread Batter

  • 3 ripe bananas, mashed
  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Cinnamon Swirl

  • 2 teaspoons ground cinnamon
  • 1/4 cup brown sugar

Instructions

  1. Prepare oven and pan: Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan thoroughly and set aside to prevent sticking.
  2. Make the banana batter: In a large mixing bowl, combine the mashed bananas, melted unsalted butter, granulated sugar, beaten egg, and vanilla extract. Mix well until all ingredients are fully incorporated and smooth.
  3. Combine dry ingredients: In a separate bowl, whisk together the all-purpose flour, baking soda, and salt to ensure even distribution of the leavening agents and salt.
  4. Mix dry and wet ingredients: Gradually add the dry flour mixture to the wet banana mixture. Stir gently and just until the flour is incorporated to avoid overmixing, which can make the bread dense.
  5. Prepare cinnamon swirl: In a small bowl, mix together the ground cinnamon and brown sugar thoroughly to create the swirl topping.
  6. Assemble the loaf: Pour half of the banana bread batter into the prepared loaf pan, spreading it evenly. Sprinkle half of the cinnamon and brown sugar mixture evenly over the batter. Pour the remaining banana batter on top, then sprinkle the remaining cinnamon mixture over the top layer.
  7. Create the cinnamon swirl effect: Using a knife or a skewer, gently swirl the cinnamon mixture into the batter. Make several figure-eight motions or circular swirls to create an attractive marbled pattern without overmixing.
  8. Bake the bread: Place the loaf pan in the preheated oven and bake for 60 to 70 minutes. Check doneness by inserting a toothpick in the center; it should come out clean or with a few moist crumbs. If the bread’s top browns too quickly, loosely cover it with aluminum foil to prevent burning.
  9. Cool and serve: Remove the bread from the oven and let it cool in the pan for 10 minutes. Then, transfer it to a wire rack to cool completely before slicing. This helps the bread set and makes slicing easier.

Notes

  • Use very ripe bananas for the best flavor and moisture.
  • Do not overmix the batter to keep the bread tender and light.
  • Swirling the cinnamon mixture lightly preserves the marbled effect and taste contrast.
  • Baking times might vary slightly depending on your oven; start checking at 60 minutes.
  • Store leftover banana bread in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
