Energy Bites
- 1 cup natural creamy almond butter
- ⅓ cup pure maple syrup
- ½ cup vanilla protein powder
- 2 teaspoons vanilla extract
- ½ cup rolled oats
- 1 teaspoon salt
- 1 ½ teaspoons cinnamon
Topping
- ½ cup white chocolate chips
- 1 teaspoon coconut oil
- Mix Ingredients: Add almond butter, maple syrup, vanilla protein powder, vanilla extract, rolled oats, salt, and cinnamon to a mixing bowl. Use a rubber spatula to thoroughly combine until a thick batter forms.
- Form Balls: Line a baking sheet with wax paper. Using a 1.5 tablespoon mini cookie scoop, portion out balls of the batter onto the sheet. Roll each ball between your palms to smooth the edges.
- Melt Chocolate: In a microwave-safe bowl, combine white chocolate chips and coconut oil. Microwave in 10-15 second increments, stirring each time, until melted and smooth. Take care not to overheat or burn the chocolate.
- Drizzle Chocolate: Drizzle the melted white chocolate evenly over the tops of the energy bites to add a sweet finishing touch.
- Chill: Place the baking sheet with the energy bites in the refrigerator for 1 hour, or until the balls have hardened and set.
- Store: Transfer the energy bites to an airtight container. Store in the refrigerator for up to one week or freeze for longer storage.
