Ingredients

Scale

Chicken and Seasonings

  • 4 boneless, skinless chicken breasts
  • 4 cloves fresh garlic, minced
  • 2 tsp Italian seasoning
  • Salt and pepper, to taste

Liquid Ingredients and Sauce

  • 1 cup low-sodium chicken broth
  • 1/4 cup freshly squeezed lemon juice (about 2 lemons)
  • 1/4 cup caper berries
  • 2 tbsp olive oil
  • 2 tbsp butter (for sauce)

Garnish

  • 1/4 cup fresh parsley, chopped

Serving (Optional)

  • Cooked pasta or rice, for serving

Instructions

  1. Prepare Ingredients: Mince the garlic cloves finely and squeeze fresh lemon juice from about 2 lemons. These ingredients will infuse the chicken with bright and savory flavors.
  2. Sear the Chicken: Heat olive oil in a skillet over medium-high heat. Season the chicken breasts generously with salt and pepper. Place them in the hot skillet and sear each side until golden brown, about 3-4 minutes per side. This step locks in the juices and adds a rich taste.
  3. Layer in Crockpot: Transfer the seared chicken breasts to the crockpot. Evenly distribute the minced garlic and caper berries on top of the chicken. Pour in the chicken broth and lemon juice to create a flavorful cooking liquid.
  4. Add Seasoning and Cook: Sprinkle Italian seasoning over the chicken and liquids. Cover the crockpot and cook on low for 6 hours or on high for 3 hours, until the chicken is tender and fully cooked.
  5. Finish the Sauce: Remove the cooked chicken from the crockpot and set aside. Whisk the butter into the remaining cooking juices in the crockpot to create a rich and silky sauce.
  6. Serve: Plate the chicken breasts and spoon the buttery lemon-caper sauce over them. Garnish with chopped fresh parsley. Serve over cooked pasta or rice if desired, for a complete meal.

Notes

  • For a thicker sauce, you can reduce the cooking juices by simmering on the stove before whisking in butter.
  • If caper berries are unavailable, regular capers can be used as a substitute with a slightly stronger flavor.
  • Ensure not to overcook the chicken in the crockpot to maintain tenderness.
  • This dish can also be made on the stovetop for a quicker preparation by simmering the chicken in sauce instead of slow cooking.
  • Leftovers keep well refrigerated for up to 3 days and reheat gently to avoid drying out the chicken.
