Ingredients

Scale

Chicken and Filling

  • 4 pieces boneless, skinless chicken breasts
  • 8 slices deli-style turkey
  • 4 slices Swiss cheese

Breading Station

  • 1 cup all-purpose flour
  • 2 large eggs
  • 1/2 cup milk
  • 1 cup panko breadcrumbs
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Cooking & Sauce

  • 4 tablespoons butter (divided: 2 tbsp for frying, 2 tbsp for sauce)

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to ensure it is hot enough to finish cooking the chicken rolls thoroughly after searing.
  2. Prepare Chicken: Place each chicken breast between two sheets of plastic wrap and gently pound them using a meat mallet or rolling pin until approximately 1/2 inch thick; this helps in even cooking and easier rolling.
  3. Assemble Rolls: Lay out each flattened chicken breast and place two slices of turkey and one slice of Swiss cheese on top. Roll each breast tightly and secure the rolls with toothpicks or kitchen twine to prevent them from opening during cooking.
  4. Setup Breading Station: Arrange three shallow dishes: one with flour seasoned lightly with salt and pepper, one with beaten eggs mixed with milk, and one with panko breadcrumbs combined with garlic powder. This sequence ensures a proper breading layer on the chicken rolls.
  5. Bread the Chicken: Dredge each chicken roll first in the flour, then dip it into the egg mixture, and finally coat it evenly with the breadcrumb mixture, pressing gently to adhere the crumbs well.
  6. Sear Chicken: Melt 2 tablespoons of butter in a large skillet over medium heat. Add the breaded chicken rolls and cook for about 4-5 minutes on each side until they develop a golden-brown crust, sealing the juices inside.
  7. Bake to Finish: Transfer the seared chicken rolls to a baking dish and bake them in the preheated oven for 20-25 minutes. Bake until the internal temperature reaches 165°F (75°C) to guarantee they are cooked safely and remain juicy.
  8. Make Swiss Cheese Sauce: In a saucepan, melt the remaining 2 tablespoons of butter over medium heat. Whisk in an equal amount of flour to form a roux. Gradually add milk while whisking constantly until the sauce is smooth and thickened. Stir in Swiss cheese until melted and combined, creating a rich, creamy sauce.
  9. Serve: Remove toothpicks or twine from the chicken rolls. Plate the rolls and drizzle generously with the warm Swiss cheese sauce. Serve immediately for best flavor and texture.

Notes

  • Use panko breadcrumbs for a crispier texture.
  • If you don’t have Swiss cheese, Gruyere is a good substitute.
  • Remove toothpicks or twine before serving to avoid choking hazards.
  • Use a meat thermometer to ensure chicken is fully cooked to 165°F for safety.
  • Leftover sauce can be refrigerated and reheated gently; add a splash of milk if too thick.
