For the Cheesy Mashed Potatoes

  • 2 pounds Yukon Gold potatoes, peeled and cubed
  • ½ cup milk
  • 2 tablespoons butter
  • 1 cup shredded cheddar cheese
  • Salt and pepper, to taste
  • 1 tablespoon chopped fresh parsley or chives, for garnish

Instructions

  1. Season and Sear Chicken: Season the chicken breasts or thighs generously with salt and pepper. Heat oil in a skillet over medium-high heat and sear the chicken until golden brown and cooked through, reaching an internal temperature of 165°F. Remove from the skillet and keep warm.
  2. Sauté Garlic: Reduce heat to medium. In the same skillet, melt butter and add minced garlic. Sauté for about 1 minute until fragrant but not browned to avoid bitterness.
  3. Make Roux: Stir in the all-purpose flour to the garlic butter mixture to create a roux. Cook while stirring for 1 to 2 minutes to eliminate the raw flour taste.
  4. Prepare Gravy: Gradually whisk in chicken broth, breaking up any lumps to make a smooth gravy. Let it simmer until thickened. Stir in heavy cream if desired, and season with salt and pepper to taste.
  5. Cook Potatoes: Bring a large pot of salted water to a boil and cook the peeled and cubed Yukon Gold potatoes for 12 to 15 minutes until tender when pierced with a fork. Drain well.
  6. Mash Potatoes: Mash the drained potatoes with butter, warm milk, and shredded cheddar cheese until creamy and smooth. Season with salt and pepper to taste.
  7. Assemble and Serve: Spoon the cheesy mashed potatoes onto plates, slice the cooked chicken and place over the potatoes. Pour the garlic gravy generously on top and garnish with fresh parsley or chives. Serve immediately.
