Banana Base
Toppings & Coating
- 3 dark chocolate squares (1 oz)
- ¾ tsp coconut oil
- 4 tbsp crunchy peanut butter
- 2 tbsp shredded coconut
- Prepare the tray: Line a tray or plate with baking paper to prevent sticking and make it easier to handle the frozen banana snacks.
- Cut the bananas: Peel the bananas and cut each one in half lengthwise, then cut each half lengthwise again to create 4 slices per banana, resulting in a total of 12 slices.
- Melt the chocolate: Break the dark chocolate squares into a small microwave-safe bowl, add coconut oil, and microwave in short bursts until fully melted. Stir to combine until smooth.
- Spread peanut butter: Evenly spread about 1 teaspoon of crunchy peanut butter onto each banana slice, ensuring every piece has a creamy coating.
- Add melted chocolate: Pour or drizzle the melted chocolate over each peanut butter-coated banana slice, covering them carefully.
- Sprinkle coconut: Lightly sprinkle ½ teaspoon of shredded coconut over each slice to add texture and a hint of tropical flavor.
- Freeze the banana snacks: Place the prepared banana slices onto the lined tray and freeze for 1 to 2 hours until solid.
- Store frozen: Once the banana pieces are frozen, transfer them into food storage containers and keep them frozen until ready to serve.
- Serve: Remove the frozen banana snacks from the freezer a few minutes before eating to allow slight defrosting for better texture.
Notes
- Use ripe but firm bananas to ensure the slices hold together well.
- If you prefer, substitute crunchy peanut butter with smooth peanut butter or any nut butter of choice.
- Dark chocolate with at least 70% cocoa content works best for a rich flavor and less sweetness.
- You can add other toppings like chopped nuts or a sprinkle of cinnamon for variety.
- Store the banana snacks in an airtight container in the freezer for up to 1 week.
