Dough
- 1 cup mashed ripe bananas (about 2 large bananas)
- 2 3/4 cups all-purpose flour
- 1/4 cup granulated sugar
- 2 1/4 tsp active dry yeast
- 1/4 cup unsalted butter, melted
- 1/2 cup warm milk
- 1/2 tsp salt
- 1 large egg
Filling
- 1/2 cup brown sugar, packed
- 2 tsp ground cinnamon
- 2 tbsp unsalted butter, softened
Icing
- 1 cup powdered sugar
- 2–3 tbsp milk
- Activate Yeast: In a bowl, whisk together warm milk, yeast, and a pinch of sugar. Let sit until foamy, about 5 minutes, to activate the yeast fully.
- Mix Wet Ingredients: Add mashed bananas, melted butter, egg, granulated sugar, and salt to the yeast mixture. Stir until well combined to create a smooth wet base.
- Prepare Dough: Gradually incorporate the flour into the wet ingredients until a smooth dough forms. Knead the dough for about 5 minutes until elastic and smooth. Cover the dough and let it rise in a warm place until doubled in size, roughly 1 hour.
- Roll and Fill: Roll the risen dough into a rectangle. Spread softened butter evenly over the surface, then sprinkle with brown sugar and ground cinnamon to prepare the filling. Roll the dough tightly into a log shape and slice into 9 equal rolls.
- Second Rise and Bake: Place the cinnamon rolls in a greased baking dish. Cover and allow the rolls to rise for an additional 20 minutes, then bake in a preheated oven at 350°F (175°C) for 25 minutes or until golden brown.
- Prepare Icing and Serve: Whisk together powdered sugar and 2 to 3 tablespoons of milk until smooth to make the icing. Drizzle the glaze over the warm cinnamon rolls before serving for a sweet finish.
Notes
- Ensure the milk is warm (around 110°F or 43°C) to properly activate the yeast without killing it.
- Letting the dough rise properly is key to fluffy cinnamon rolls.
- You can adjust the icing consistency with more or less milk according to preference.
- For richer flavor, consider adding chopped nuts or raisins to the filling.
