Ingredients

Scale

Meat and Dairy

  • 810 slices bacon, cooked and chopped
  • 1 tbsp butter or olive oil
  • 2 cups heavy cream or half-and-half
  • 2 cups shredded cheddar cheese (medium or sharp)

Produce

  • 1 large onion, diced
  • 2 large carrots, peeled and sliced
  • 4 cloves garlic, minced (or 1 tsp garlic powder)

Pantry Items & Spices

  • 4 cups chicken broth
  • 12 tsp salt
  • 1 tsp black pepper
  • ¼ tsp dried thyme
  • ½1 tsp red chili flakes (optional)
  • 16 oz gnocchi

Instructions

  1. Cook bacon: Cook the bacon slices in a large pan over medium heat until crispy. Remove, drain on paper towels, then chop into small pieces and set aside for later.
  2. Sauté vegetables: In a large pot, heat butter or olive oil over medium heat. Add the diced onions and sliced carrots, cooking until the vegetables are tender and the onions are translucent, about 5-7 minutes. Stir in minced garlic or garlic powder and cook for another minute until fragrant.
  3. Add broth and simmer: Pour in the chicken broth and bring the mixture to a simmer. Allow it to cook gently for about 5 minutes to blend the flavors.
  4. Incorporate cream and cheese: Stir in the heavy cream or half-and-half along with salt, black pepper, dried thyme, and optional red chili flakes. Gradually add the shredded cheddar cheese, stirring continuously until the cheese melts smoothly into the soup.
  5. Cook gnocchi: Add the gnocchi to the pot and cook according to package instructions, usually about 2 minutes or until they float and become soft and tender.
  6. Finish with bacon and season: Stir in the chopped crispy bacon. Taste the soup and adjust seasoning with additional salt or pepper as needed. Serve the soup hot for a comforting meal.

Notes

  • Use sharp cheddar cheese for a more pronounced flavor.
  • If you prefer a lighter soup, use half-and-half instead of heavy cream.
  • For a spicier kick, increase the amount of red chili flakes.
  • Gnocchi can be made fresh or store-bought; cook times may vary accordingly.
  • Leftovers can be stored in the refrigerator for up to 3 days; reheat gently to prevent curdling.
  • For a vegetarian version, omit bacon and use vegetable broth instead of chicken broth.
