Ingredients

Scale

Chicken

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Toothpicks or kitchen twine

Filling

  • 2 cups mixed apples, diced (Granny Smith and Honeycrisp recommended)
  • 8 oz Brie cheese, cut into small pieces
  • 1 cup baby spinach leaves
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. Preheat the Oven: Preheat your oven to 375°F (190°C) to ensure it’s ready for baking the chicken.
  2. Prepare the Chicken: Place the chicken breasts on a cutting board and carefully cut a pocket into each breast without slicing all the way through, creating space for the stuffing.
  3. Prepare the Filling: In a medium bowl, combine the diced Granny Smith and Honeycrisp apples, Brie cheese pieces, and baby spinach leaves. Season with salt, pepper, garlic powder, onion powder, and dried thyme, mixing well to blend the flavors.
  4. Stuff the Chicken: Gently fill each chicken breast pocket with the apple, Brie, and spinach mixture, using your fingers to push the filling evenly inside.
  5. Secure the Filling: Use toothpicks or kitchen twine to close the openings of the stuffed chicken breasts, keeping the filling securely inside during cooking.
  6. Season the Chicken: Brush the outside of the stuffed chicken breasts with olive oil, then season again with salt, pepper, and dried thyme for extra flavor.
  7. Cook the Chicken: Arrange the stuffed chicken breasts in a shallow baking dish and bake in the preheated oven for 30 to 35 minutes, or until the chicken is fully cooked and the internal temperature reaches 165°F (74°C).
  8. Rest Before Serving: Remove the chicken from the oven and let it rest for 5 minutes to allow the juices to redistribute, ensuring moist and tender results.
  9. Serve: Remove the toothpicks or twine from the chicken, slice each breast to reveal the savory apple and Brie filling, and serve warm.

Notes

  • You can substitute other sweet-tart apples if Granny Smith and Honeycrisp are unavailable.
  • Ensure the chicken pockets are not cut too wide to prevent filling leakage during baking.
  • Letting the chicken rest after baking enhances juiciness and flavor.
  • For a crispier exterior, broil the chicken for 1-2 minutes at the end of baking, watching carefully to avoid burning.
  • Use a meat thermometer to guarantee the chicken is safely cooked through.
